Tasting Notes
The Vintage Seasons
This wine can only be made when the conditions are right. The vines are left to over-ripen and berries beginning to raison. Volumes are therefore are low and this wine is a blend of two years – 2017 and 2019. 2017 was a productive year with good rainfall, with some naturally occurring botrytis appeared in the late season. 2019 in contrast was hot and dry, and concentration of flavours occurred through the hot dry weather.
The Vineyard
The vines for the 2017 component are sited on a north west facing ridge with yields are around 0.5 tonne per acre. The 2019 fruit was from the south west block which is more sheltered.
The Winemaking
The grapes were left to over-ripen on the vine and picked at 16 Be then whole bunch pressed and fermented under controlled temperature, with fermentation halted at around 8 Be. The juice was aged in a combination of new French oak barriques and stainless tanks and blended before bottling in September 2019.
